salmon patties

My husbands co-workers love this salmon patty recipe. They are easy and inexpensive to make.


Salmon patties


one can of pink salmon
2 eggs
large onion chopped up
1/2 cup white corn meal
3/4 cup flour

Open and drain your salmon. Look for small bones, and remove. If you miss a few do not worry about it. They are very very soft and you do not even know they are there. Add ingredients and mix well. I use a ten inch skillet, and I put a half of cup of vegetable oil in the bottom. (Let it heat up, on low to medium heat for three minutes or so that you do not saturate your salmon, it puts a seal on the patties, when you fry them.) Make patties about the size you would make medium cheeseburger, not too thick. Fry on each side til golden brown, around five minutes on each side. Enjoy!
